While it may seem as if the two are very similar, believe us when we tell you that there is actually a significant difference between calzones and stromboli. Both are amazing Italian dishes, but many people often mistake them both for being one of the same. Stromboli vs. Calzone

The Sealing Technique

The main difference that sets a calzone apart from a stromboli is the sealing technique. When you’re making a calzone, you’re essentially making a portable pizza, and the same thing applies to strombolis as well. However, when you’re making the calzone, you the pizza dough is folded in half like a taco. And when it’s finished baking, your left with a half-circle giant pizza pocket.

With stromboli, the process is much different. The dough you use is shaped to be rectangular. And when all the ingredients are added to it, instead of folding it, you roll it up into a giant pizza cigar.

Filling

When it comes to filling, a lot of the ingredients added into both overlap each other. You have your standard meats such as pepperoni and sausage as well as vegetables like spinach and peppers. The distinctive feature between the two often involves both the cheese and sauce.

Most calzones use ricotta cheese and a blend of other cheeses whereas strombolis are typically made with mozzarella cheese to keep moisture at a minimum.

And as for sauces, you’ll never see a calzone with tomato sauce in it. And this is because calzones are meant to be dipped. And while strombolis can also be dipped, some of them are often made with sauce inside them, pre-rolled.
